Instructions:

  1. Prepare the peppers: Start by wearing gloves to protect your hands from the spicy peppers. Rinse the cayenne peppers under cold water and pat them dry with a paper towel. Cut off the stems and roughly chop the peppers. You can leave the seeds in for extra heat or remove them for a milder sauce.

  2. Sauté the peppers: In a saucepan over medium heat, add the chopped peppers and minced garlic. Sauté them for about 5 minutes, stirring occasionally until they become fragrant and slightly softened.

  5. Thicken (optional): If you want a thicker hot sauce, sprinkle in the xanthan gum and blend again until the sauce thickens. Be cautious not to overdo it, as xanthan gum can make the sauce too thick if used excessively.

  6. Adjust the seasoning: Taste the hot sauce and adjust the seasoning to your preference. You can add more salt, vinegar, or even a pinch of sugar to balance the flavors.

  7. Store: Pour the Louisiana hot sauce into clean, sterilized bottles or jars. Seal them tightly and let the sauce cool to room temperature. Then, store it in the refrigerator.
