Homemade Piri Piri Sauce

Ingredients:

  • 8 fresh red Bird’s Eye chili peppers (also known as Piri Piri chilies)
  • 1 red bell pepper, chopped (for added sweetness and texture)
  • 3 cloves garlic, peeled
  • 1 medium onion, chopped
  • 1 lemon, juiced
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried oregano
  • Salt, to taste
  • 1 teaspoon black pepper

Instructions:

  1. Prepare Ingredients: a. Clean the Bird’s Eye chilies, removing the stems (and seeds for a milder sauce). b. Peel the garlic and chop the onion and red bell pepper.

  2. Blending Ingredients: a. In a blender or food processor, add the chilies, red bell pepper, garlic, onion, lemon juice, red wine vinegar, smoked paprika, oregano, salt, and black pepper. b. Blend until the ingredients are well combined and have formed a slightly chunky paste.

  3. Cook the Sauce: a. Pour the blended mixture into a saucepan. b. Bring the mixture to a boil over medium heat. c. Once boiling, reduce the heat to low and let it simmer for around 20-30 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking or burning.

  4. Finalizing the Sauce: a. After simmering, turn off the heat and allow the sauce to cool for a few minutes. b. While the sauce is cooling, add the olive oil to the blender or food processor. c. Add the slightly cooled sauce to the blender or food processor and blend until the oil is fully incorporated and the sauce reaches your desired consistency.

  5. Storing: a. Once the sauce is ready and at room temperature, pour it into sterilized glass bottles or jars. b. Seal tightly and store in the refrigerator. The sauce should keep well for several weeks.
