Spanish Patatas Bravas
Ingredients:
For the Brava Sauce:
- 2-3 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 1/2 teaspoons smoked paprika (sweet or hot, as per your preference)
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 can (14 oz/400g) diced tomatoes
- 1 teaspoon sugar
- Salt and black pepper, to taste
- 2 tablespoons mayonnaise (optional, for garnish)
For the Potatoes:
- 4-5 medium-sized potatoes, peeled and cut into 1-inch cubes
- Vegetable oil, for frying
- Salt, to taste
Instructions:
Prepare the Brava Sauce:

In a saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent.

Add the minced garlic, smoked paprika, and red pepper flakes. Cook for about a minute until fragrant.

Stir in the diced tomatoes and sugar. Simmer the sauce over low heat for about 15-20 minutes, stirring occasionally, until it thickens. Season with salt and black pepper to taste.

Remove the sauce from heat and allow it to cool slightly. Then, blend it until smooth using a blender or food processor. Set aside.
Fry the Potatoes:

Heat vegetable oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C).

Carefully add the cubed potatoes to the hot oil, ensuring they are not overcrowded. Fry for about 5-7 minutes or until they are golden brown and crispy.

Using a slotted spoon, remove the fried potatoes from the oil and place them on a paper towel-lined plate to drain any excess oil. Season with salt while they are still hot.
Serve the Patatas Bravas:

Place the crispy fried potatoes on a serving plate. Drizzle the prepared Brava sauce over the potatoes.

Optionally, you can add a dollop of mayonnaise on top of each potato for extra creaminess.
